After evaluation two methods of pectin extraction, we established the technique of papaya pectin extraction.

The efficiency of pectin extraction of different fruit maturity levels was evaluated. There was no significant difference between the samples by hot water extraction method. The hot acid extraction method was better than hot water extraction method in mature papaya fruit.
